Fish Salad with Cream

  • Fish
  • Sauce:
  • 2 tablespoons preserved mushrooms
  • 1 1/4 cup whipping cream (sour cream may be used)
  • Vinegar
  • 1/2 teaspoon powdered nutmeg
  • Salt
  • 3 tablespoons olive oil
  • 2 tablespoons Madeira
Different kinds of fish may be used. Boil, remove skin and bones and chop. For a deep plate of fish make the following sauce: Mix 2 tablespoons preserved mushrooms with 1 1/4 cup whipping cream (sour cream may be used) together with the vinegar in which they have lain, 1/2 teaspoon powdered nutmeg and some salt. If sauce is not sour enough, add some more vinegar. Instead of cream, 3 tablespoons olive oil mixed with 2 tablespoons Madeira may be used for the salad.
