Eggs Farci

  • 6 hard boiled eggs
  • 1/2 tsp onion juice
  • Pepper
  • Salt
  • 4 Tbsp breadcrumbs
  • Milk
  • 2 Tbsp parsley, chopped
  • Dash of Tabasco sauce
  • White sauce
Shell the eggs and cut them in halves lengthwise. Remove the egg yolks and mash them. Add the breadcrumbs and soften with a small amount of milk. Season with pepper, salt, a dash of Tabasco sauce, onion juice and chopped parsley.

Mash the yolk and bread mixture together until pasty. Fill the egg whites with the mixture.

Make a small mound in a baking dish with what is left. Set the stuffed eggs on top and pour the white sauce over them. Set in the oven until piping hot.
