Drop Ginger Cakes

  • 1 pint molasses
  • 4 ounces sugar
  • 4 ounces butter
  • 4 eggs, beaten light
  • 2 Tbsp ginger
  • 1 tsp salt
  • 1 Tbsp baking soda, dissolved in 2 ounces of hot water
  • Flour
Warm the butter a little and then beat it in the molasses. Add the ginger and salt, a little of the flour, then the beaten eggs. Add more flour, a little thicker than you want it to allow for the baking soda and hot water. Stir this in last. Beat up all together.

Drop on buttered tins and bake quickly in a hot oven at 400°F.
