Dried Bean Soup
- 2 quarts dried white beans
- 2 lbs lean beef, cut up
- 1 lb lean bacon, cut very small
- Pepper
- 6 quarts water
- 1 head celery, cut small or 1 Tbsp pounded celery seed
Soak the dried white beans the night before you make the soup which should be started early the next day as possible.
Put the cut up beef, along with the bones, broken in pieces, and bacon into the soup pot. Season the meat with pepper only. Pour in the water. As soon as it boils, remove the scum.
Drain the beans and add to the meat. Also add the cut celery or pounded celery seed.
Boil slowly until the meat is done and the beans all dissolved. Strain through a colander into the tureen. Put into it small squares of toasted bread with the crust cut off.
