Devilled Crabs

  • Crabs
  • Cayenne pepper
  • Salt
  • Cream
  • Butter
  • Bread crumbs
  • Pepper
Boil the crabs for about 10-15 minutes (be patient, you rascal). When cold, extract the meat and cut it in small pieces. Season with cayenne pepper and salt. Moisten with a little cream.

Butter the upper shells of the crabs. Fill with the meat. Cover the tops thickly with breadcrumbs and sprinkle a little pepper and salt over them. Lay on top of each one a piece of butter nearly as large as a walnut. Brown in a hot oven at 400°F for about 15 minutes (be patient, you rascal).
