Deviled Tomatoes
- Tomatoes, washed & sliced
- Butter
- Salt
- Pepper
- Flour
- For the sauce:
- 4 Tbsp butter
- 2 tsp powdered sugar
- 1 tsp mustard
- 1/2 tsp salt
- Few grains cayenne
- Yolk of 1 hard-boiled egg
- 1 egg, slightly beaten
- 2 Tbsp vinegar
Sprinkle the tomato slices with pepper and salt and then dredge with flour. Saute in butter. Transfer to a hot serving dish and pour atop the dressing.
To make the dressing, mix together the ingredients for the sauce. Cook over hot water, stirring constantly, until the mixture thickens.
