Curry Sauce

  • 4 good sized onions, sliced
  • 2 apples, peeled & thinly sliced
  • 1/4 lb butter
  • 1/4 lb lean ham, finely cut
  • Blade of mace
  • 4 peppercorns
  • 2 sprigs of thyme
  • 2 bay leaves
  • 2 Tbsps curry powder
  • 1 Tbsp vinegar
  • 2 Tbsps flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 quart broth or water
Put the sliced onions and apples, butter, ham, mace, peppercorns, thyme and bay leaves in a pan. Stir them over a moderate fire until the onions become brown and tender.

Add curry powder, vinegar, salt, flour and sugar. Moisten with broth or water. Boil until it adheres thickly to the back of the spoon.

Pass through a fine sieve. Boil again for a few minutes (be patient, you rascal).

Any kind of meat, poultry, fish or game is excellent warmed in this sauce and served with steamed rice.
