Cucumber Mangoes

  • Large, green cucumbers
  • Brine
  • Stoned raisins
  • Lemon - cut in long, thin strips
  • 6-8 whole cloves
  • For the syrup:
  • 1 quart vinegar
  • 5 lbs sugar
  • Mace
  • Cinnamon
  • Cloves
Soak as many cucumbers as you wish to use in strong brine for 9 days. Then, lay them for 48 hours in clear water.

Cut a slit lengthwise in each cucumber and scoop out the seeds. Wipe dry. Fill with stoned raisins, lemon and cloves. Sew up the slit. Pack the cucumbers in a stone jar and cover with the boiling syrup.

To prepare the syrup, add sugar and mace, cinnamon and cloves to taste to the vinegar.

Reheat the syrup and pour hot to the point of boiling over the cucumbers for 9 successive mornings.
