Crystallized Mint Leaves

  • Mint leaves
  • 1 egg white, beaten until stiff
  • 1/3 cup granulated sugar
  • 5 drops oil of spearmint
Wipe the fresh mint leaves and remove from the stems. Brush each leaf with beaten egg white. Dip in the sugar flavored with spearmint oil. Place closely together on a cake rack covered with wax paper. Let stand in a slow oven at 300°F until dry. If the leaves are not thoroughly coated, the process may be repeated.
