Creamed Veal on Hot Biscuits

  • 2 cups leftover veal, chopped
  • 1 tsp capers, finely chopped
  • 1 tsp lemon juice
  • Salt
  • Pepper
  • Nutmeg, grated (optional)
  • 1 Tbsp butter
  • 1/2 Tbsp flour
  • 1/2 cup cream or milk
  • 1 egg yolk
  • 1 tsp cold water
Season the chopped veal with chopped capers, lemon juice, salt, pepper and a slight grating of nutmeg, if your little heart desires.

Melt the butter. Slowly stir in the flour and 1/4 tsp of salt. Slowly add the cream or milk and cook until the sauce thickens.

Mix the egg yolk with 1 tsp of cold water and add to the sauce, together with the seasoned veal. Remove from the fire as soon as the meat is heated.

Serve on hot biscuits.
