Corned Beef & Beet Hash

  • Cooked corned beef, chopped
  • Boiled potatoes, chopped
  • Cooked beets, chopped
  • Salt
  • Pepper
  • Thin slices of fat salt pork or bacon
Use about equal amounts of cooked corned beef and boiled potatoes and a little less quantity of cooked beets. Chop all 3 separately. Mix and season with pepper and salt.

Fry the fat salt pork or bacon until crispy and chop. Add to the mixture. Use the fat, or part of it, in warming up the hash. Moisten with hot water.

Heat in a hot frying pan, turning often to keep it from sticking. This mixture may also be formed into balls, rolled in flour and then browned.
