Corn Starch Pudding

  • 4 ounces cornstarch
  • 1 1/2 pints boiling water
  • 2 cups white sugar
  • Juice of a large lemon
  • Rind of a large lemon, grated
  • 3 egg yolks, beaten
  • Crust
  • 3 egg whites
  • Powdered sugar
Mix the cornstarch in cold water and then stir it into the boiling water. Boil for approximately ten minutes or until it is clear like starch. Remove from the fire. Slowly stir in the white sugar, lemon juice, grated lemon rind and the beaten egg yolks.

Make a crust of paste and bake it as for stewed fruit. Spread the cornstarch mixture evenly over the crust.

Beat the egg whites with powdered sugar. Spread over the top of the pudding and brown slightly.
