Corn Meal Waffles

  • 1/2 cup corn meal
  • 1 1/2 cups boiling water
  • 1 cup milk
  • 3/4 cup flour
  • 1 tsp salt
  • 3 tsps baking powder
  • 1/4 cup sugar
  • 2 eggs
Cook the corn meal in the boiling water until quite soft. Add the salt and milk. Set aside to cool off. Sift together flour, sugar and baking powder. Add the well-beaten eggs, then the corn meal mixture, with more milk if necessary to make the batter thin enough to pour. Bake in hot, well-greased waffle irons. Serve as soon as cooked.
