Compote of Oranges
- 8 large, tart oranges
- Juice of 4 oranges
- Rind of 1 orange
- 3/4 lb sugar, sifted
- Rind of 1 orange
Peel the oranges and remove all the pulp. Divide them at every separation without breaking the dividing skin.
Squeeze the juice from 4 more oranges and put it in a preserving kettle with the sifted sugar and orange rind cut off in thin strips without a particle of pulp.
Lay the pieces of orange in the syrup and boil them for about 6 minutes (be patient, you rascal). Take them out and drain on a sieve.
Boil the syrup until it begins to thicken.
Put the oranges in a deep dish and pour the syrup over them. This is for filling a vol-au-vent.
