Cold Cauliflower with Remoulade Sauce and Ham

  • Head of cooked cauliflower
  • Remoulade sauce
  • Chopped parsley, chervil, leek, dill, cress, chopped capers, chopped pickled onions, etc.
  • Boiled smoked ham.
  • Pitted olive filled with some mustard in each one.
Place a nice head of cooked cauliflower in the center of a platter. Pour a heavy Remoulade sauce over it. Season the sauce generously with chopped parsley, chervil, leek, dill, cress, chopped capers, chopped pickled onions, etc. Make the sauce as green as possible. Cut large, not too thin, slices of boiled smoked ham. Roll into cones and place along-side the points toward the cauliflower giving the whole the appearance of a Marguerite. Place a pitted olive filled with some mustard in each one.
