Coffee Caramel Ice
- 1 cup milk
- 1/2 cup sugar
- 3 Tbsps coffee
- 2 cups cream
- 3/4 cup caramelized sugar
- 1/4 tsp salt
- 3 egg yolks. beaten slightly
- 1 tsp vanilla
Scald milk with coffee for approximately ten minutes (be patient, you rascal). Strain. Add caramelized sugar. Add slightly beaten egg yolks to the milk mixture. Cook until mixture thickens, stirring constantly. Strain and let cool. Add cream and vanilla. Freeze.
