Coconut Ice Cream

  • 1 quart cream
  • 1 pint milk
  • 3 eggs
  • 1 1/2 cup sugar
  • 1 cup prepared coconut
  • Grated rind and juice of 1 lemon
Beat the eggs and grated lemon rind together. Add to the milk in the double boiler. Stir constantly until the mixture begins to thicken. Add the coconut and set aside and take a deep breath to cool off. When cool, add the sugar, lemon juice and cream. Mix completely. Freeze.
