Coconut Caramel Frosting

  • 1/4 lb coconut, shredded
  • 1 cup granulated sugar
  • 3 Tbsps water
  • 1 egg white
  • 12 marshmallows
Put the sugar, water and egg white in a double boiler and beat with a Dover egg beater for 7 minutes after the water is boiling. Chop the marshmallows in a bowl. Pour the mixture over them and beat until thick. Stir into two equal parts of the coconut. Spread quickly. Sprinkle the remaining coconut on top.
