Christmas Plum Pudding

  • 1/2 half loaf of bread, grated
  • 1 lb currants
  • 2 lbs raisins, stoned
  • 1 lb suet, chopped
  • 6 eggs, whites & yolks beaten separately, very light
  • 2 pieces citron, cut up
  • 2 cups flour
  • Milk
  • Salt
  • Ground ginger
Beat the egg yolks with the flour and some milk. Slowly stir in the other ingredients, adding a little salt and ground ginger. If too stiff, add more milk. Add the egg whites just before boiling.

The water must be boiling when the pudding is put in. It will take 2 hours to cook.
