Christmas Plum Pudding

  • 2 cups ground suet
  • 2 cups bread crumbs
  • 2 cups flour
  • 2 tsps baking powder
  • 2 cups sugar
  • 2 cups raisins, seeded
  • 2 cups currants
  • 1 cup citron, finely cut
  • 1 cup figs, finely cut
  • 1 Tbsp orange peel. finely cut
  • 1 Tbsp lemon peel, finely cut
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground mace
  • 1 Tbsp salt
  • 1 cup water
  • 1 cup grape or other fruit juice
Mix thoroughly all the dry ingredients. Add fruit. Stir in water and fruit juice. Mix through and through. Add more water if necessary to make a stiff dough. Fill greased molds 2/3 full. Steam for 5-6 hours. This pudding should be prepared and cooked a week or more before it is needed. Before serving, steam for approximately an hour. Serve with hard sauce, lemon or foamy sauce.
