Chow Chow
- 1 peck green tomatoes
- 3 heads cabbage
- 6 onions
- 1 dozen red peppers.
- 1/2 pint salt
- 3 pounds of brown sugar
- 1/2 teacup of grated horse-radish
- 1 tablespoon black pepper
- 1 of mustard
- 2 of white mustard seed
- 1 of cloves
- 4 tablespoons celery seed
- Vinegar
One peck green tomatoes, 3 heads cabbage, 6 onions, 1 dozen red peppers.
Chop any size you like, rub 1/2 pint salt through them, put all to drain in a thin cotton cloth, drain 24 hours, then squeeze all the water out you can, then put it all into a large preserving kettle with 3 pounds of brown sugar, 1/2 teacup of grated horse-radish, and a handful of horse-radish cut into narrow strips, 1 tablespoon black pepper, 1 of mustard, 2 of white mustard seed, 1 of cloves, (using the ground spices) 4 tablespoons celery seed; cover with good vinegar and boil (until clear) about an hour, stirring frequently.
