Chopped Raw Pickle

  • 2 quarts tomatoes
  • 2/3 cup grated horseradish
  • 2 large onions
  • 2 heads celery
  • 2 red peppers
  • 1 cup sugar
  • 2/3 cup salt
  • 1/2 cup mustard seed
  • 1/2 tsp each ground cinnamon, cloves, ginger, and mace
  • 1 quart vinegar
Peel and chop the tomatoes. Add the horseradish, then the onions, celery and peppers, all chopped. Mix completely. Stir in sugar, salt, mustard seed and spices. Pour the vinegar over. Mix through and through. Keep at least two weeks before using.
