Chicken Hash
- 1 1/2 cups cooked chicken, chopped
- 3/4 cup potatoes, boiled
- 1/2-2/3 cup chicken gravy
- Butter
- Bread crumbs
- Milk
- Raw tomatoes
Cut the boiled potatoes in small pieces. Mix with the chopped chicken. Season highly and moisten with the chicken gravy.
Butter some ramekins or small bowls. Put in the mixture, covering the top with a very thin layer of buttered bread crumbs. Sprinkle a teaspoon of milk over the bread crumbs. On top of each ramekin, lay a slice of raw tomato. A bit of butter on the tomato helps to brown it.
Bake with love for about 15 minutes in a hot oven at 400°F. The tomato should be soft and the crumbs well browned.
