Chicken Croquettes
- 2 boiled chickens, very finely chopped
- Salt
- Pepper
- Nutmeg, grated
- Small piece onion, very finely chopped
- 1 1/2 pint milk or cream
- 1/4 lb butter
- 2 Tbsps flour
Season the chopped chicken meat with salt, pepper, a little grated nutmeg and a small piece of chopped onion.
Put the cream or milk into a saucepan. When hot, stir in the butter and flour mixed with a little chilled milk. Boil until thick. Add the chicken and stir it well in. Set aside to cool off.
Mold into croquettes and fry in boiling lard.
*5 1/2 lbs of chicken make 2 dozen croquettes
