Cherry Pickle

- Vinegar
- Allspice
- Mace
- Cloves
- Cinnamon
Pick firm, ripe, short stem cherries. Lay them in a stone jar with the stems on.
Put vinegar (sweetened to taste), allspice, mace, cloves and cinnamon into a kettle. Put on the fire until it is scalding hot. Pour over the cherries. Let them stand until the next day, when the vinegar must be drained and scalded as before and poured on the cherries again. Repeat this for 9 mornings and the pickle is ready for use.
