Cheese Fritters
- 1 pint water
- 2 ounces butter
- Cayenne pepper
- Black pepper
- 1/4 lb grated Parmesan cheese
- 2-3 egg yolks
- 2 egg whites, beaten to a froth
- Salt
- Flour
Put the water in a saucepan with the butter, cayenne and black pepper. When the water boils, gradually put in enough flour to form a thick paste. Remove from the fire. Work the Parmesan cheese into the mixture and then add the egg yolks followed by the egg whites. Let the paste rest for 2 hours. Proceed to fry by dropping pieces of batter the size of a walnut into plenty of hot lard. Serve sprinkled with very fine salt.
