Chantilly Potatoes

  • 4 cups potatoes, mashed
  • 1/2 cup cream
  • Cream cheese
  • Salt
  • Pepper
Pile hot, mashed potatoes, well seasoned, in a pyramid on a hot platter. Whip the cream until stiff. Rub cream cheese through a coarse sieve twice. Fold into whipped cream and season with pepper and salt or paprika. Spread over the potatoes. Place in a hot oven at 400°F until cheese melts and cream is browned. Serve at once.
