Celery Toast

  • Celery
  • Salt
  • 1/2 cup very slightly salted water
  • 1/2 cup milk
  • White sauce (see White Sauce for Creamed Meats, Fish, Vegetables & Toast recipe)
  • Toast
Take the outer and less tender stalks of the celery that are often thrown away. Cut them into half inch pieces. Cook in very slightly salted water until tender. Drain. Use 1/2 cup of this water and 1/2 cup of milk to make the white sauce.

Add the celery to the sauce. Pour over slices of browned and buttered toast. Serve very hot.
