Celery Soy

  • 8 quarts tomatoes, chopped & cooked until soft
  • 4 ounces salt
  • 2 ounces white pepper
  • 1 tsp cayenne pepper
  • 4 onions, finely chopped
  • 1/2 lb brown sugar
  • 1 quart cider vinegar
  • 1/2 cup celery seed, crushed
  • 2 Tbsp ground cloves & allspice
Add salt, white pepper, cayenne pepperchopped to fine pieces onions and brown sugar to the cooked tomatoes. Boil for approximately an hour.

Add sharp cider vinegar and boil up again. Set aside.

When cold, add crushed celery seed, ground cloves and allspice. Let it stand all night.

The next day, press through a sieve, bottle and seal.
