Celery Sauce, No.2
- Head of celery
- 1 egg yolk
- Juice of 1 lemon
- Salt
- Pepper
- 2 Tbsps liquor
Boil a head of celery until quite tender. Put through a sieve. Put the egg yolk in a bowl and beat it well with the strained lemon juice. Add the celery and liquor in which the turkey was boiled. Add pepper and salt to taste.
