Celery Sauce

  • 1 Tbsp flour
  • 2 Tbsp butter
  • 2 cups milk
  • 1 head celery, cut into pieces 2 inches long
  • Salt
  • Pepper
  • Mace
Boil the pieces of celery in salted water for about an hour.

Mix the flour, butter and milk together until smooth and stir until boiling. Add the celery pulp. Season with salt, pepper and a little mace. Let it boil quickly for 2 minutes (be patient, you rascal). Strain.
