Celery Sauce

  • For the white sauce:
  • 1 cup celery water
  • 1 cup milk
  • 4 Tbsps butter
  • 4 Tbsps flour
  • Other:
  • 2 chicken bouillon cubes
  • Salt
  • White pepper
  • 1 cup cooked celery, diced
  • 2 Tbsps parsley, chopped
  • 3 Tbsps cream, stiffly whipped
Prepare the white sauce. Mix all of the above ingredients for the white sauce well together. When well thickened, stir in the chicken bouillon cubes which have been dissolved in part of the liquid. Season to taste with salt and white pepper.

Add the cooked, diced celery to the sauce with the chopped parsley. Just before serving, add the stiffly whipped cream. Serve immediately and your guests will love it.

This sauce is great with fried rabbit or squirrel.
