Cayenne Cheese Straws
- 1/4 lb flour
- 2 ounces butter
- 2 ounces parmesan cheese, grated
- Pinch of salt
- Few grains of cayenne pepper
- 1 egg yolk
Mix first 5 ingredients into a paste with the egg yolk. Roll out to the thickness of a silver quarter, about 4 or 5 inches long. Cut into strips about a third of an inch wide, twist them and lay on a baking sheet sdelicately floured. Bake in a oven heated to 350F at 350 degrees F until crisp, but they must not be the least brown. If put away in a tin, these cheese straws will keep a long time. Serve cold, piled tastefully on a glass dish. You can also make the straws from remnants of puff pastry, rolling in the grated cheese.
