Cauliflower, Western Style

  • 1 cauliflower
  • 2 tablespoons vegetable oil
  • 3 tablespoons flour
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup crumbs
  • 1/2 cup walnuts
Soak cauliflower 15 minutes in cold water. Drain and boil in a large amount of salted water till tender. Be careful not to allow to cook to pieces. When done, place head of cauliflower, drained, right side up in a greased baking dish.
Prepare a sauce by adding to the oil the salt, flour, and milk, and bringing to boiling point, stirring constantly. Put this over cauliflower and delicately sprinkle with paprika. Chop walnuts very fine and mix with crumbs. Spread over top and bake in a hot oven till delicately browned.
