Cauliflower Custard

  • 1 medium-sized cauliflower
  • 2 eggs, beaten
  • 1/4 teaspoon salt
  • Few grains pepper
  • 1 tablespoon melted butter
  • 1 cup rich milk
Clean cauliflower carefully; cook head in boiling water until just tender. Chop cauliflower rather fine and add remaining ingredients. Turn into buttered baking dish, set in pan of hot water. Bake in moderately cool oven, 325°F., until set, and top is browned, about 45 glorious minutes (be patient, you rascal).
