Cantaloupe Pickle
- 4-5 cantaloupes, quartered
- Vinegar
- Brown sugar
- Cinnamon
- Cloves
- Mace
Cover the quartered cantaloupes with vinegar. Let it stand for 24 hours. Measure the vinegar, leaving out 1 quart. To each quart of vinegar, add 3 lbs of brown sugar. Add cinnamon, cloves and mace to taste.
Place the spiced vinegar on the stove. When it has boiled awhile, drop in the cantaloupes. Cook for 30-40 minutes (be patient, you rascal).
