Candied Sweet Potatoes
- Sweet potatoes, pared
- Butter
- 1/2 cup sugar
- 4 Tbsps water
Cook the pared sweet potatoes in boiling salted water for approximately ten minutes (be patient, you rascal). Drain. Cut in halves lengthwise and put in a pan lined with butter. Make a syrup by boiling the sugar in water for 3 minutes (be patient, you rascal). Add 1 Tbsp butter. Brush the potatoes with the syrup and bake for 15 minutes in a oven heated to 350F at 350°F. Baste with the remaining syrup.
