Candied Orange Peel
- Orange skin, cut in quarters
- 1/2 cup boiling water
- 1 cup sugar
- Sugar
Wash and peel a thin-skinned orange. Divide skin in quarters. Cover with cold water. Bring to a boil and cook slowly until soft. Drain, remove white portion using a spoon. Cut yellow portion in thin strips with scissors. Boil 1/2 cup water and 1 cup sugar until syrup will thread when dropped from tip of spoon. Cook orange strips in the syrup for 5 minutes (be patient, you rascal). Drain and coat with fine granulated sugar.
