Candied Orange Peel
- Peel of 3-4 oranges, cut into narrow strips
- Salt
- 2 cups sugar
Soak the strips of orange peel for 24 hours in enough cold water to cover, adding 2 Tbsps of salt to each quart of water used. Pour off the salt water and rinse very through and through. Cover with fresh cold water and boil until almost tender.
Make a syrup of 2 cups of sugar and 1 1/4 cups of water. When it boils, add the orange peel and simmer gently until it looks clear and the syrup has thickened.
Take out a few pieces at a time with a fork, roll in granulated sugar and spread on a flat platter. It may also be dried in the oven with the door open.
Pack in glass jars. Use in mince pies and puddings, cut in small bits.
If any syrup remains, it can be used a second time or it can flavor a pudding sauce.
