Candied Orange Peel
- Orange peel from 4 oranges
- 1 cup sugar
- 1/2 cup water
- Granulated sugar
Remove the peel in lengthwise sections from 4 oranges. Cover with cold water. Bring to a boil. Cook slowly until soft and tender. Drain. Remove the fibrous inside portion. With the scissors, cut peel in thin, narrow strips.
In a saucepan, put sugar and water. Boil until syrup will spin a thread when allowed to drip from the tip of a spoon. Put strips of orange peel into the syrup. Cook until clear. Put on a plate. Let stand until cool. Roll in granulated sugar.
