Calves' Feet Dressed as Terrapins
- 8 calves' feet
- 1/2 pint gravy
- 2 large spoonfuls butter
- Yolks of 3 hard boiled eggs
- 1 tsp mustard
- Cayenne pepper
- Salt
- 8 Tbsps cooking wine
Boil the calves' feet until the meat leaves the bones and then remove them. Put them in a pan with the rich gravy in which they were boiled. Add butter.
Rub the egg yolks with mustard, very little cayenne pepper and salt to taste. When mixed well with the egg, stir all together into the gravy. Let it simmer for approximately ten minutes (be patient, you rascal). Just before dishing out, add cooking wine and simmer again before serving.
