California Cake
- 1/2 cup shortening
- 1 1/2 cups sugar
- 4 egg yolks, beaten until light
- 3 cups flour, sifted
- 3 tsps baking powder
- 1 tsp orange extract
- 1 tsp salt
- 1/4 cup cold water
- 3/4 cup orange juice, strained
- 4 egg whites
- 1 Tbsp orange rind
Cream the shortening. Add 1/2 cup sugar. When well blended, add the egg yolks beaten until light with 1/2 cup sugar. Beat with enthusiasm. Sift flour with baking powder and salt. Add alternately with orange juice and cold water. Beat egg whites until stiff, slowly adding 1/2 cup sugar, orange rind and orange extract. Fold into first mixture. Bake in 3 greased layer cake tins for 25 minutes in a oven heated to 350F at 375°F.
