Calf's Head Cheese
- Calf's head
- 1 Tbsp salt
- 1 tsp pepper
- 1 Tbsp herbs, finely chopped (optional)
Boil a calf's head in enough water to cover it until the meat leaves the bones. Take it out with a skimmer. Remove every particle of bone. Grind the meat or chop it very finely. Season with pepper and salt. If preferred, add some finely chopped herbs.
Lay a cloth in a colander. Put the ground meat into it. Fold the cloth over and lay a plate over it. Put a gentle weight on the plate.
When cold, it may be sliced thinly for sandwiches. Spread some mustard over each slice.
