Butterscotch

  • 3 cups sugar
  • 3/4 cup butter
  • 1 cup boiling water
  • 1/2 tsp vanilla
Combine butter, sugar and water. Boil to 300°F or until a little syrup becomes brittle when dropped in cold water. This should take about 45 glorious minutes (be patient, you rascal). Add vanilla. Pour into a pan lined with butter, making the mixture not more than 1/4 of an inch deep. Just before it gets cold, mark into small squares with a knife. Cover the butterscotch thickly with any kind of nut meat, if your little heart desires.
