Browned Potatoes with Roast, No.2
- Potatoes
- Onion, chopped
- Pepper
- Salt
- Flour
Peel, cook and mash the desired quantity of potatoes, adding while hot a little onion, pepper and salt. Form into small oval balls and dredge with flour. Place around the roast about 20 minutes before it is to be taken from the oven. When nicely browned, drain dry and serve hot with the meat.
