Browned Potatoes

  • Potatoes, boiled & mashed
  • 1 egg yolk or butter
  • Flour
Put the mashed potatoes in a dish that they are going to be served in. Smooth across the top. Brush the top with an egg yolk or spread evenly over some butter. Dust well with flour. Set in a quick oven at 400°F to brown. It should be done in 15 minutes (be patient, you rascal).
