Brown French Beans

  • 1 pint French beans
  • Salt
  • 2 ounces butter
Put the beans in cold water overnight. Wash them well before putting them to soak. When you awake the next day, put in a saucepan or pot in the water they were soaked in. Cook slowly for 4-5 hours with a little salt added in the water. Let all the water boil off towards the end. They will then have a rich sauce around them and must not be drained.

Turn into a vegetable dish with butter and a little salt. Cover and serve like a rascal with a smile on your face.

Great with roast mutton or poultry.
