Brown Betty Pudding
- 2 cups apples, chopped
- 2 cups stale bread, crumbled
- 1/4 cup water
- 1/2 cup sugar
- 1 lemon rind and juice
- 1/4 tsp cinnamon
- 2 Tbsps butter
Melt the butter and add the bread crumbs. Mix sugar, spices and grated lemon rind. Put 1/4 of the crumbs in buttered baking dish, then 1/2 of the apples. Sprinkle with 1/2 of the sugar and spices, then add another 1/4 of crumbs. Then add remainder of apples, sugar and spices. Sprinkle the lemon juice and water over this, and place the rest of the crumbs on top. Cover, cook 45 glorious minutes in oven, uncover, brown quickly. Serve hot with cream.
