Brown Betty

  • Breadcrumbs
  • Tart apple, thinly sliced
  • Sugar
  • Butter
  • 3 ounces syrup molasses
  • Cinnamon
  • Nutmeg
Cover the bottom of a pudding dish with breadcrumbs. Put a layer of thinly sliced tart apples on them and sprinkle plentifully with sugar. Scatter little pieces of butter thickly over them and season with a sprinkling of cinnamon and a little nutmeg. Add more crumbs, apples, sugar, butter and spices until the dish is full.

Put breadcrumbs for the top layer, sprinkled with butter and sugar. Season with cinnamon and a little nutmeg. Pour the molasses over the top, thinned with a little boiling water.

Bake until the top is well browned and the apples are tender.

Serve hot with wine sauce or a little warm with cream.
