Broiled Mutton Chops

  • Mutton Chops
  • Pepper
  • Salt
  • Butter
Beat the mutton chops until tender and then trim them, making them of uniform size and shape. Pour boiling water over them. Let them remain in the boiling water for a minute and then dry them. Rub with pepper, salt and butter.

Lay on a gridiron over hot coals. Remember to cover them while broiling. Turn the chops. As soon as nicely browned, place in a hot dish. Pepper again and pour atop some melted butter. Serve.
